Millionaire Muffins

They taste like a million bucks and the recipe makes a million.  Not really.  Just 120.  Seriously 120…..just not all at once.

Start by going to the store and getting at least 7 pounds of flour.  Read that again.  Also get a new can of baking powder.  Trust me – you need a new can.  I’ll wait here until you get back……

Back so soon?  You must live closer to a grocery store than I do.  Let’s go.

Start by putting 20 cups of flour into your largest bowl.  Think bathtub sized. I used a combination of wheat flour and white flour.  Now add 2 1/2 cups of sugar.

Next add the baking powder and salt.  Whisk to combine well.

Now portion this mixture into baggies or leftover jars.  It’s about 2 1/4 cups per bag.  You want to end up with 10 equal bags.  I ended up with nine this time for some reason.  This mix is so forgiving that it really won’t matter.

 Now stop here and figure out why Brutus is crying.

Tell him that he should be smiling because you will be having muffins for breakfast tomorrow!

That worked like a charm!  Now put your bags of mix into the freezer to wait for you.  In the morning you will grab one bag, 1 egg, 1 cup of milk, and 1/3 cup of oil.  Mix it up and make it into something fun.  Add one cup of flavor (mini chocolate chips) and bake at 400 degrees for 18 minutes.  Yum!

 The Recipe

Millionaire Muffin Mix

20c flour

2 1/2 c sugar

3/4 c baking powder

1 1/2 T salt

to each bag of mix add:

1 c milk

1 egg

1/3 c oil

1 cup of addition – chocolate chips?

Bake at 400 degrees for 18 minutes.  Enjoy!
